On August 31, our Chef Mathieu Vande Velde had the honor of being the very first guest of the show La Route Étoilée, broadcast on RTL and presented by Ludovic Daxhelet.
Taken to Bouillon, on the banks of the Semois, the Chef took on a series of challenges before facing the final test : elevating Semois trout into a dish worthy of a Michelin-starred restaurant… all in just 25 minutes!
To meet the challenge, he created an inspired and daring plate, combining :
- trout marinated in olive oil and lemon juice,
- zucchini, wild plums and raspberries,
- beurre blanc sauce with meadowsweet and tobacco.
A refined dish, whose elegant presentation was as appealing as its flavors, unanimously praised by the jury composed of Lola (communications manager of the Pays de Bouillon), Thierry Renard (fish farmer) and forensic doctor Philippe Boxho.
A memorable moment, blending authenticity and creativity, that highlights the talent of our Starred Chef and his art of elevating the products of our terroir.
