Le Roannay is located in Francorchamps, a few minutes by car from the historical centre of Stavelot.

Our region is brimming with rich heritage!

If you are thirsty for culture, then Stavelot and its surroundings boast many museums: the Abbey in Stavelot, the Malmundarium in Malmedy, many cultural discoveries in Spa, Reinhardstein Castle in Ovifat and many others!

If you are a fan of sport and adventure, then head to the Escape Challenge in Malmedy, tree-top adventure courses, crazy golf, paintball, the outdoor swimming pool in Stavelot, Coo Adventure, etc.

If you prefer to choose a stay to recharge your batteries in the midst of nature, then the Fagne de Malchamps plateau and Domaine de Berinzenne Park are only a few kilometres from the hotel. Enjoy a walk along the famous wooden duckboards and breathe in the pure air of preserved nature.

A Michelin star & the “Young Chef of the Year” prize

The 2023 Michelin Guide ceremony for Belgium and Luxembourg took place on 13th March.

Our gastronomic restaurant enjoyed the enormous pleasure of obtaining a first MICHELIN Star and is now included in this famous guide! This is a fantastic form of recognition for all the members of our team, who have been working with such passion since we opened.

Our chef Mathieu Vande Velde also received the “Young Chef of the Year” prize during this wonderful ceremony!

Cooking classes with Chef Mathieu Vande Velde

Since January 2023, Chef Mathieu Vande Velde welcomes you for a gastronomic cooking class !

On the program, the realization of a 3-course Menu, with the advice of the Chef & his team, followed by the tasting of this Menu accompanied by its amuse-bouche & mignardise, comfortably installed in our starred restaurant (1 Michelin Star).

Next dates & themes :

  • June 11 from 4pm : Cooking with wood fire
  • July 9 from 4pm : Vegetable theme, with a visit of the market gardener [SOLD OUT]
  • August 13 from 4pm : Around the shellfish

 150€/class, with a “all inclusive package” :

  • cooking class with Chef Mathieu Vande Velde,
  • 3 course menu,
  • water & wine selection!

15 out of 20 in the Gault&Millau : such a wonderful accolade!

On 7th November, the awards ceremony for the 2023 Gault&Millau guide took place. Our gourmet restaurant entered the famous guide, with a very good score of 15 out of 20 and a 3 chef’s hat rating !

This is a magnificent accolade only 2 months since we opened, for the entire team who ardently do their utmost every day, alongside our two chefs Mathieu Vande Velde & David Martin !


“On the eve of its centenary, this legendary hotel-restaurant near to the famous Ardennes circuit has been fully restored. A restaurant has been opened next to the luxurious hotel, run by none other than David Martin, who has wasted no time in taking the restaurant to the highest levels of gastronomy. His right-hand man is Mathieu Vande Velde, his former executive chef and second at La Paix. Together, they make dishes adapted to the era but which also draw their roots from the region. Having gained fame on television, this young chef possesses the talent for translating the cuisine of his mentor into gourmet dishes that are perfectly presented and respectful of their ingredients. The produce is at the forefront in all the dishes. For example, Ardennes ham is used in a smoky-flavoured mousse that is served with compressed pig’s ears and lard brioche. The Ondenval trout soufflé is presented on the plate with a fantastic oyster and dill cream. The Brittany lobster is cooked on a wood fire whilst its pincers are served raw. All these dishes display culinary genius. This establishment has not wasted time in putting itself on the gastronomic map and has already earned a Gault & Millau 3 chef’s hat rating!”
