Our Chef Mathieu featured in La Route Étoilée on RTL

On August 31, our Chef Mathieu Vande Velde had the honor of being the very first guest of the show La Route Étoilée, broadcast on RTL and presented by Ludovic Daxhelet.

Taken to Bouillon, on the banks of the Semois, the Chef took on a series of challenges before facing the final test : elevating Semois trout into a dish worthy of a Michelin-starred restaurant… all in just 25 minutes!

To meet the challenge, he created an inspired and daring plate, combining :

  • trout marinated in olive oil and lemon juice,
  • zucchini, wild plums and raspberries,
  • beurre blanc sauce with meadowsweet and tobacco.

A refined dish, whose elegant presentation was as appealing as its flavors, unanimously praised by the jury composed of Lola (communications manager of the Pays de Bouillon), Thierry Renard (fish farmer) and forensic doctor Philippe Boxho.

A memorable moment, blending authenticity and creativity, that highlights the talent of our Starred Chef and his art of elevating the products of our terroir.

Driving simulator from € 30

Step into the shoes of an elite driver and feel the adrenaline of a race by trying out our new driving simulator! Thanks to high quality images, you can enjoy a total immersion on the Spa-Francorchamps circuit.

This driving simulator can now be found on the ground floor of our establishment, near to the reception desk. This area is open to all, whether customers of the hotel or not.

  • Price : 30€ for 30minutes | 50€ for 1hour

Come and test your driving skills and train virtually on the finest circuit in the world! RACB National Team rally driver Tom Rensonnet had the pleasure of inaugurating the simulator as soon as it was installed!

Stéphanie provincial finalist – Sommelier of the Year 2025!

A few weeks ago, our sommelier, Stéphanie Noël, was selected for the “Sommelier of the Year 2025” election!

We’re delighted to announce that, thanks to your many votes, she is now one of the provincial finalists and one of the top 3 in the province of Liège!

A huge thank you for your invaluable support!

What’s next? Stéphanie will take part in a final round on February 5, where a professional jury will select one winner per province. One of them will then be crowned “Sommelier of the Year 2025”.

We’re proud of his achievements and wish him all the best for the rest of the competition! 🍷
