Cooking classes with Chef Mathieu Vande Velde

Chef Mathieu Vande Velde regularly welcomes you for a gastronomic cooking class !

On the program, the realization of a 3-course Menu, with the advice of the Chef & his team, followed by the tasting of this Menu accompanied by its amuse-bouche & mignardise, comfortably installed in our starred restaurant (1 Michelin Star).

We are proud to announce that Gault & Millau has once again renewed its trust in us by awarding us this excellent score of 15.5/20 !

“À deux pas du célèbre circuit ardennais, le confortable salon apéritif de cet établissement, qui allie charme historique et ambiance contemporaine, est le cadre idéal pour venir à la rencontre de la subtilité de la cuisine créative du chef Mathieu Vande Velde. Dès les mises en bouche, celui-ci surprend par la précision et l’élégance de ses plats qui mettent en valeur des produits d’exception comme ceux du terroir. La finesse du Skreï ikéjimé se révèle dans une délicate carbonara de coquillages et de porc ibérique, tandis que le homard bleu breton rôti au barbecue ravi par l’intensité d’un praliné de noisettes et la légèreté de sa mousseline de bisque. Our Chef Mathieu featured in La Route Étoilée on RTL

On August 31, our Chef Mathieu Vande Velde had the honor of being the very first guest of the show La Route Étoilée, broadcast on RTL and presented by Ludovic Daxhelet.

Taken to Bouillon, on the banks of the Semois, the Chef took on a series of challenges before facing the final test : elevating Semois trout into a dish worthy of a Michelin-starred restaurant… all in just 25 minutes!

To meet the challenge, he created an inspired and daring plate, combining :

  • trout marinated in olive oil and lemon juice,
  • zucchini, wild plums and raspberries,
  • beurre blanc sauce with meadowsweet and tobacco.

A refined dish, whose elegant presentation was as appealing as its flavors, unanimously praised by the jury composed of Lola (communications manager of the Pays de Bouillon), Thierry Renard (fish farmer) and forensic doctor Philippe Boxho.

A memorable moment, blending authenticity and creativity, that highlights the talent of our Starred Chef and his art of elevating the products of our terroir.
